Ivy gourd curry



 Ingredients:
  •  Ivy gourd /tondekaayi 100gram
  • Tomato 1 chopped
  • Onion 1 chopped
  • Green chillies 2 chopped
  • Oil 2-3 tsp
  • Split black gram 1tsp
  • Bengal gram 1tsp
  • Mustard seeds ½ tsp
  • Cumin seeds ½ tsp
  • Asafoetida /hing
  • Turmeric  pinch
  • Red chilli powder 1tsp
  • Curry powder 1tsp
  • Salt 
Preparation:
  • Heat  oil in a heavy bottomed pan, add split black gram and Bengal gram. Wait till it becomes golden brown.
  • Now add mustard seeds, cumin seeds and asafoetida(wait for  half minute), then add green chillies and  onion. Keep frying for a  minute.
  • Add tomato, red chilli powder, curry powder and turmeric(wait for one more minute).
  • Now add ivy gourd,salt  and water.   keep boiling it for another 10 to 15 minutes and the curry is done.
  • This goes well with Chapathi.

Kiwifruit and Orange juice




Ingredients:
  • Kiwi fruit 1
  • Orange 1
  • Sugar 3-4tsp
  • Salt pinch
  • Honey 1-2 tsp
  • Water 2 glass
  • Kiwi fruit  1 slice or orange one slice for garnishing
Preparation:
  • Take kiwi fruit peel and chop it.
  • Take orange and peel it.
  • Mix kiwi fruit, orange, salt, sugar, honey, water,   and  grind it.
  • Filter the juice.
  • Add  ice cubes.
  • Add it to the serving glass and serve it.
  • Garnishing is optional.

Tomato curry


 Ingredients:
  • Tomato 4 chopped
  • Onion 2 chopped
  • Green chillies 2 chopped
  • Oil 2-3 tsp
  • Split black gram 1tsp
  • Bengal gram 1tsp
  • Mustard seeds ½ tsp
  • Cumin seeds ½ tsp
  • Asafoetida /hing
  • Turmeric  pinch
  • Red chilli powder 1tsp
  • Curry powder 1tsp
  • Salt 


Preparation:
    • Heat the oil in a heavy bottomed pan, add split black gram and Bengal gram. Wait till it becomes golden brown.
    • Now add mustard seeds, cumin seeds and asafoetida(wait for  half minute), then add green chillies and  onion. Keep frying for a  minute.
    • Add tomato, red chilli powder, curry powder, turmeric, salt (and water if required)   keep boiling it for another 2 or 3 minutes and the curry is done.
    • This goes well with Chapathi or Jolada rotti.

      Curd Rice

      This is one of the simplest Indian recipe, best one if you are a bachelor.  Here is the cook book.



      Ingredients:
      • Cooked Rice 1 cup
      • Curd(Yogurt) 2cup
      • Ginger 1/2inch fine chopped
      • Split black gram 1tsp
      • Mustard seeds 1/2 tsp
      • Green Chilli 2 fine chopped
      • Red chilli 1
      • Asafoetida
      • Coriader leaves
      • Curry leaves
      • Oil 1tsp
      • Salt 
      • Sugar(Optional)
      • Pamogranite(Optional)
      • Raisins (Optional)

       Preparation:
      • Heat oil in a pan in medium flame. Add split black gram. Wait till it turns golden brown.
      • Now add mustard seeds. Once it flutters add asafoetida, curry leaves and redchilli. Switch of the flame. 
      • Now add curd,coriander leaves and cooked rice. Mix it well. 
      • Mango Pickle tastes well with curd rice.
      Tips: If you cool the curd rice in fridge it tastes better. Remember not to freeze, just cool it.

      Veg soup



      Ingredients :
      • Fine chopped veg like carrot, baby corn, cauliflower, spring onin, beans 1cup
      • Water 3-4 cup
      • Cloves (lavanga)1-2
      • Pepper corn 4 powdered
      • Corn flour 2 tsp
      • Salt
      • Sugar
      Preparation:
      • Add chopped veg, cloves, pepper corn, salt and sugar to boiling water.
      • Add corn flour in 4tsps of cold water, stir it and add it to boiling veg stock.
      • Boil for another 3 minutes
      • Soup is ready to serve

      Holige/Obbattu


      This is one of the most common Indian Recipe. Called by different names Holige, Obbattu, Pooran Poli ...
      My Favourite too.


      Ingredients :
      • Channa dal /kadale bele 1 cup
      • Sugar or jaggery  1cup
      • Cardamom powder 1tsp
      • Plain flour/maida  1 ½ cup
      • Rice flour 1tsp
      • Semolina /rava 1tsp
      • Turmeric pinch
      • Salt
      • Oil

      Preparation:
                                 Kanaka
      • Mix Plain flour(maida), rice flour,  semolina, turmeric and salt. Add water,oil(4tsp) and make a smooth dough. Cover and keep it aside for 20mins. (This mixture is called “Kanaka” in Kannada).
                                      Hoorana
      •  Boil channa dal, wait for it to cool down. Press out the water, add it to the mixi and powder it.
      •  Take heavy bottomed pan, add  powdered channa dal and jaggery.
      •  Boil this mixture for 10-15minutes. Keep stirring  while you boil this.
      •  Let it cool down. Add cardamom and mix well with hand to get a smooth mixture. (This mixture is called “Hoorana” in Kannada).

      • Take a ball of dough(Kanaka) and spread it with hand. Keep a ball of chana mixture(Hoorana) and cover  it with dough and seal the ends.
      •  Apply oil to a plastic paper, keep so prepared  ball on it and roll it like chapathi (The plastic and oil prevents it from sticking). Fry on hot tava till it gets golden brown colour.
      • Serve hot/cold with ghee and sugar syrup
      Important Note: Don't serve with ghee when I visit your home as I don't eat ghee or butter  :)

      palak pakoda/spinach fritters


      Ingredients:
      •         Palak 1cut chopped
      •         Onion 1 chopped
      •         Red chilli powder 1tsp
      •         Masala powder 1tsp
      •         Cumin seeds
      •         Salt
      •         Gram flour 4-6tsp
      •         Rice flour 1tsp
      •         Oil for deep frying
      Preparation:
      • Heat the oil in a pan.
      • Take a bowl add palak, onion, red chilli powder, masala powder, cumin seeds, gram flour, rice flour, salt, add  1spoon of heat oil and knead it well.
      • Take little bit of dough and deep fry pakodas.
      • Serve hot pakodas with ketchup or any other chutneys.

      Eggplant Fritters - Badanekayi baje


       
      Ingredients:
      • Eggplant(Badanekayi) 1/2
      • Gram flour 4 tea spoons
      • Asafoetida/Hing
      • Salt
      • Cumin seeds 1 tsp
      • Pinch of turmeric
      • Red chilli powder 1 tsp
      • Oil for deep frying
      Preparation:
      • Slice the eggplant(badanekayi) - not too thin
      • Mix gram flour, asafoetida, salt, cumin seeds, turmeric, red chilli powder and make a smooth paste.
      • Heat oil in a frying fan 
      • Add ½ tsp of oil to the paste and mix it well.
      • Now dip the chopped eggplants in the paste and deep fry it.
      • Eat hot Eggplant fritters with ketchup

      Ginger chutney

      Ingredients:
      • Ginger 1 inch
      • Coconut 1cupgrated
      • Green chilli 1-2
      • Salt
      • Tempering(optional): Oil, curry leaves, mustard seeds,Urid dal, chana dal 
      Preparation:
      • Take all the ingredients and grind it into a smooth paste.
      • Temper the ground paste(optional)
      • It tasty chutney to have with  uddina vada.

      Kiwi Fruit Juice


      Ingredients:
      • Kiwi fruit 2 
      • Lemon 1
      • Water 2 glass
      • Pinch of salt
      • Honey 1-2spoons
      • Sugar 3-4spoons
       Preparation:
      • Take kiwi fruits, peel and chop it.
      • Mix chopped kiwi fruit, water, salt, sugar, honey and blend it.
      • Filter it. Add lemon juice and stir it well.

      Apple Milkshake


      Ingredients:
      •        Apple 1
      •        Sugar 3-4 tsps
      •        Cardamom powder pinch
      •         Honey 1tsp
      •         Milk 2 glass
      •        Ice cubes
      Preparation:
      •        Take apple and chop it.
      •     Mix apple chops, sugar, cardamom powder, honey, milk and blend it.
      •        Add  it to the serving glass.
      •     Add ice cubes.

      pudina pakoda/mint fritters


      Oh! Guests are visiting you in an hours time and  you are in a hurry to prepare some snacks for them?
      Here is a easy and quick to prepare recipe. Try it out.

      Ingredients:
      •         Pudina 1cupchopped
      •         Onion 1 sliced
      •         Red chilli powder 1tsp
      •         Masala powder 1tsp
      •         Cumin seeds
      •         Salt
      •         Gram flour 4-6tsp
      •         Rice flour 1tsp
      •         Oil for deep frying
      Preparation:
      • Heat the oil in a pan.
      • Take a bowl add pudina, onion, red chilli powder, masala powder, cumin seeds, gram flour, rice flour, salt, add  1spoon of hot oil and knead it well.

      Orange Juice


      Ingredients:
      • Orange 1
      • Salt pinch
      • Honey 1-2 tsp
      • Sugar 3-4tsp
      • Ice cubes
      • Water 2glass
      Preparation:
      • Peel the orange.
      • Mix peeled orange, salt, sugar, honey,  water  and grind it.
      • Filter the juice.
      • Add Ice cubes
      • Juice is ready to serve.

      Fresh sweet corn tikki


      Ingredients:
      • Fresh sweet corn 1cup
      • Onion ½ chopped
      • Green chilli 1fine chopped
      • Ginger, garlic paste 1tsp
      • Coriander leaves chopped
      • Bread crumbs 2-3tsp
      • Salt
      Preparation
      • Mix all the ingredients.:
      • Grease your palms with some oil and take small portion of the mixture and flatten it to make a Tikki (flat disk). Repeat the procedure for rest of mixture.
      •  Now shallow fry each tikki  with some oil, flipping it both sides so as to cook the tikkis till nicely browned.

      Fenugreek seeds salad


      This belief in foods having inherent "hot" or "cold" properties is prevalent
      throughout India and China. Well, I am also a firm believer of this theory.
      When your body heat-cold balance is upset and you are feeling excess
      heat, Methi (Fenugreek) is the best home remedy. You can have the
      sprouted fenugreek seeds with the salad. Here is the quick hands on this salad.

      Ingredients:
      • Fenugreek seeds 2-3 tsps
      • Carrot 1cup grated
      • Tomato 1 chopped
      • Coriander leaves chopped
      • Onion 1 chopped
      • Green chilli 1 chopped
      • Salt
      • Lemon juice 3-4tsp
      Preparation:
      •  Soak 2-3tsps of fenugreek seeds over night.
      • Wash the soaked fenugreek seeds and tightly bind it in a cotton towel.
      • It takes 4-5hours to sprout.
      • Now take a bowl, add all the ingredients.Mix it well.
      • Have this with curd rice.

      Mango lassi


      This is a tasty and easy to prepare drink. Takes just 5mins to prepare!
      Tasty drink to have in summer, have it chilled.

      Ingredients:
      • Mango 1chopped
      • Sugar 3-4 tsps
      • Yogurt 1glass
      • Cardamom powder
      Preparation:
      • Mix all the ingredients and blend it. Add little water if required,
      • Add cardamom for flavour.
