Papaya halwa


Ingredients:
  • Grated  raw papaya 4cup
  • Sugar 1cup
  • Milk 3cups
  • Cardamom powder ½ tsp-1tsp
  • Butter or ghee (optional) 1tsp
  • Dry fruits 
Preparation:
  • Heat the pan. Add butter and dry fruits. Wait for about a minute, then add grated papaya and milk. Boil it for 10 to 15 minutes.
  • Now add sugar, keep stirring it for another 10-15 minutes.
  • Add cardamom and stir it well one final time and done.
  • Have it with or without ice cream.

Spicy Crumpets

Ingredients:
  • Rice 1cup
  • Pressed rice ½ cup
  • Red chilli 3-4
  • Coriander seeds 1-2tsp
  • Cumin seeds 1tsp
  • Curry leaves
  • Onion 2 chopped
  • Green chillies 2 chopped
  • Coriander leaves chopped
  • Salt
  • Oil

Preparation:
  • Soak rice in water about 4-5 hours.
  • Soak pressed rice in water for 5 minutes.
  • Wash soaked ingredients and grind it with red chillies, coriander seeds,  cumin seeds and curry leaves.
  • Add salt, coriander leaves, green chillies and onion to the ground mixture.
  •  Heat the tava. Apply oil,take a spoon full of batter and thickly spread it on the hot tava.
  • Cover it with lid and cook both sides for a minute each in a medium flame.
  • Serve this crepes with coconut-jaggery mixture.

Lemon pickle


Ingredients:
  • Lemon 8-10 chopped
  • Salt 1/2 cup
  • Red chilli powder 1cup
  • Mustard  powder 1-2 spoons
  • Fenugreek seeds powder pinch
  • Cloves powder 1tsp
  • Lemon juice (1 Lemon should be good enough)
  • Turmeric powder 1-2tsp
For tempering:
  • Oil
  • Mustard seeds 1-2 spoons
  • Asafoetida (hing)
Method:
  • Take a bowl, add lemon, salt, red chilli powder,cloves powder, mustard powder,fenugreek seeds powder and add lemon juice to it.
  • Temper it with, oil,mustard seeds and asafoetida .
  • Mix it well.
  •  Store in a airtight container
  • To preserve it for long-term add vinegar.

Vangibath Powder



I think I have been telling on my blog things like "add curry powder", "add vangibath powder" etc without really saying how to make them. So thought I will share how to preprare these ingredients. Ok, let me start with this post.


Ingredients:
  • Red chillies 12
  • Lavanga 10
  • Urid dal 4tsp
  • Chenna dal 4tsp (optional)
  • Methi seeds 1/2tsp
  • Coriander seeds 4tsp
  • Pepper 8
  • Cumin seeds 4tsp
Preparation:
  • Roast all the ingredients separately.
  • Grind all the roasted ingredients  into coarse powder.
  • Store in a airtight container
  • When stored in a dry place it will stay good for about 6 months.

Plantain stem chutney




Ingredients:
  • Plantain stem 1cup chopped
  • Grated coconut 1cup
  • Green chilli 3-4
  • Mustard seeds 1tsp
  • For tempering:
  • Oil 1tsp
  • Red chilli 1
  • Curry leaves
  • Turmeric
  • Mustard seeds

Preparation:
  • Mix plantain stem, grated coconut, green chillies, mustard seeds and grind  them into smooth paste.
  • Then temper with curry leaves, red chilli,turmeric powder and musturd seeds.
  • Thats it, quite simple, right? Have it with rice.

Rava idli


Ingredients:
  • Rava(semolina) 1 cup
  • Yogurt(a little sour is good)  1 cup
  • Water 1/2 cup
  • Salt - 1/2 tsp
  • Coriander leaves 2 tbsp chopped
  • Soda 1/2 tsp
  • Oil 1 tbsp
  • Mustard seeds  1/2 tsp
  • Cumin seeds 1/2 tsp
  • Curry leaves 5-6 chopped
  • Bengal gram (chana dal) 1 tsp
  • Black gram (urad dal) 1 tsp
  • Cashew nuts 4-5 chopped
  • Green chili 1 fine chopped 
Preparation :

  • Heat oil. Add mustard and cumin seeds. When they stop crackling, add chana dal,urad dal, green chilli, curry leaves, fry a little, do not let it brown.
  • Add chopped cashew nuts and semolina, roast them a bit. Let it cool down
  • In a bowl add roasted rava, yogurt, salt, chopped coriander  and mix well to form a thick batter without lumps.
  • Check consistency. Add a little water if needed. The batter should be of pouring consistency. Keep aside for 15 minutes.
  • Just before making idli, add the soda and mix well.
  • Add a ladleful of batter into a idli plates. Steam in a steamer for 15 minutes

Baingan bartha




Ingredients:
  • Brinjal 1
  • Tomato 1-2
  • Onion 2 chopped
  • Green chillies 2
  • Oil 3tsp
  • Mustard seeds ¼ tsp
  • Cumin seeds ¼ tsp
  • Asafoetida
  • Turmeric powder
  • Coriander powder 1tsp
  • Cumin powder 1tsp
 
Preparation:
  • Take brinjal apply oil thinly and cook it in microwave for 10 minutes.
  • Now peel the brinjal skin off and chop it.
  • Heat 2tsp oil in a pan add mustard seeds, cumin seeds wait till its flutters, then add asafoetida,turmeric powder,coriander powder and cumin powder.
  • Now add onion and tomato. Don't need to brown the onions, just have them sauteed.
  • Finally add brinjal and salt. Mix them well and you are done.
